His journey begins… Chef Juan Peralta was born and raised in the culturally rich, historic city of Cuenca, in the country of Ecuador. Growing up, his family and neighbors came together every weekend enjoying wonderful meals and good times. He saw the way food has the power to bring people together and his passion for creating delicious food began. He started preparing meals for his family at a young age, when he was only 8 years old he caught and cooked his first chicken dinner!
Shortly after immigrating to the United States, Juan decided he wanted to pursue his passion for cuisine at the world-renowned Le Cordon Bleu. This French cuisine-based training has given him the skills to master the art of cooking delicious meals from a variety of cultures. Some of his favorite cuisines are Italian, American Barbecue, and Thai. Juan not only knows how to cook, but he has been in the hospitality industry for more than 29 years. He has managed and helped to start up many restaurants. He has an eye for detail and implements a high standard of dining excellence. Juan moved with his wife to Clarksville, TN, and their 5 children have called it home since 2011. In 2022 Juan was invited to join the team at Shelby’s Trio by Joe and Cathi Maynard, and he couldn’t be more excited to be launching this unique restaurant concept! Chef Juan has thoroughly enjoyed creating the menus for Skyline 500, Trattoria di Cat, and Joe’s Garage. He looks forward to continuing his journey, bringing individuals, families, and communities together through delicious meals and dining excellence!
